We have been operating our restaurant as a neighboring canteen on a back street for around 15 years since our establishment. The restaurant looks quiet from outside but once you get in, just like Singapore’s hot atmosphere, you will feel it is filled with enthusiasm from our staff and regular customers who have been supporting us for a long time.

Singapore, as a city state in South East Asia, has been expanding its presence year by year as the center of business and sightseeing place. Due to the unique historical background of the country, Singapore has been absorbing various kinds of culture of Asia countries and mixing the food cultures of China, Malaysia and India perfectly.

The Singaporean national food is “Singaporean chicken rice”. We started a specialty Hainan chicken restaurant business in 2003.

Using fresh local ingredients to cook with freshly harvested herb and ground spices and completed with the perfect balance of spiciness, sweetness, sourness and salt. Recipes of South East Asian cuisine including India and Middle East are very sophisticated and complicated. Many chefs from Japan go to Europe to learn Western cuisine, however, a lesser number of chefs go to South East Asia to learn for a long period so many of the sophisticated and complicated dishes yet to be introduced to Japan.

We think our mission is to try our best to widely and correctly convey the food culture that is colorful and has caught the world attention, such as Laksa, Bak Kut Teh and Hokkien Mee. That’s why all of our Hainan chicken and cooking sauces are made from scratch and not ready made.

Our management philosophy has never changed since our establishment. “For restaurant management, make your effort inside. No need for advertisement, promotions, or handing out flyers. Try hard preparing food from in the morning and if you provide sincere service to each customer, the customer will come back again.”
That is the first words from my former teacher on the first day of Culinary Institute where I graduated.

I truly believe that the reason why we enjoy working there is that our restaurant is full of warm atmosphere that have been created by our staff and customers for a long time.

Rather than taking a shortcut, take a detour and take it seriously and carefully. We would like to keep doing it.

I wish our staff to think and decide themselves proactively and I don’t mind that they make mistakes.
Act on their own, rather than just waiting what to do.
Let’s work together for our customer’s smile and for yourself.

Our Brands

Singaporean/Hainan chicken rice is the Singaporean national food.
Thai jasmine rice is cooked with potherbs and chicken fat. The chicken is carefully boiled in a low temperature to make it juicy and served with 3 kinds of homemade sauces (chili, ginger and sweet soy sauce).
We operate a specialty Singaporean cuisine restaurant “Hainan Jeefan Shokudo” focusing on the Singaporean chicken rice.

We have been eating a lot of local Singaporean chicken rice and can conclude that the recipe using the 3 kinds of sauces are totally different depending on each shop.
The chili sauce is especially different, and some shops have a less spicy sauce, some have a distinctive fresh taste of lime and others have more amounts of garlic. None of them are the same. Some shops do not even have sweet soy sauce or ginger sauce.

Furthermore, each restaurant has their own style of boiling their chicken, how it’s cut, how the rice is cooked and the amount of chicken fat. There are numerous variations, which mean each restaurant has their own taste.

The way chicken rice is cooked by Hainan Jeefan Shokudo is simply not a reproduction of some local shop in Singapore. Co-owner Koshiba and I believe that we produce the one which makes us think is the most “delicious!” If regular Singaporean customers say “WOW!” with happy smile (sometimes even with tears), we are so happy from the bottom of our hearts. And if some customers eat chicken rice for their first time and then they say “Good!”, we also feel the same.

A chicken rice that is delicious for local people and people who eat it for the first time. That is maybe what we pursue for the idea of chicken rice of Hainan Jeefan Shokudo.
